How many redirects in a chain is too many?

One hop is fine, two is tolerable, and beyond that you are wasting crawl budget and adding latency to every visit. Some browsers give up entirely after five to ten redirects. Point the first URL straight at the final destination rather than letting chains accumulate through successive migrations.

Should I use a 301 or a 302?

Use 301 (permanent) when the old URL is gone for good — it passes ranking signals and gets cached by browsers. Use 302 (temporary) only when you genuinely intend to restore the original URL, such as during maintenance or A/B tests.
